A Labour of Love

We currently have three main vineyards covering 20 hectares on the slopes of Windmill Down (named after an ancient windmill) around the house. Each vineyard is planted with Chardonnay, Pinot Noir and Pinot Meunier – the three grape varieties most commonly used in the production of Champagne. 

Home Vineyard is planted on the steep Southeast-facing slope immediately beneath Mill Down House at between 50 and 100m above sea level. Our larger Windmill Down Vineyard spreads across the Southeast-facing slopes to the west of the house and winery.  The third vineyard to the east of the house is, unsurprisingly, called East Vineyard!

Making wine is a labour of love and our vineyard team works hard all year round, in all weathers.  Our 100,000 vines must be pruned by hand – like pruning the roses in your garden – and the grapes are handpicked in September and October.  Our presses and winery are located on site, which means we can minimize the time between picking and pressing – a crucial factor to ensure the quality of the wine.

HAMBLEDON CLASSIC CUVEE

English Sparkling Wine

Released in May 2014 the Hambledon Classic Cuvée is an assemblage from the 2011 harvest blended with reserve wines from 2010.

Blend: The blend of Chardonnay (60%), Pinot Meunier (20%) and Pinot Noir (20%) was developed under the guidance of our leading Champenois chef de caves, Hervé Jestin.

Tasting Note: Fresh sourdough, magnolia and lily scents mingle with a hint of smoke over a core of greengage, red plums and dessert apples. The palate is vivid, almost vibrantly crunchy with precise, structured yet ripe acidity.

HAMBLEDON CLASSIC CUVEE ROSE

English Sparkling Wine

Released in November 2016 the Hambledon Classic Cuvée Rose is fermented 96% in tank and 4% in French oak barrels.

Blend: The blend of Chardonnay (90%) and Pinot Noir (10%) was developed under the guidance of our leading Champenois chef de caves, Hervé Jestin.

Tasting Notes:

A beautiful, vivid wild strawberry pink with a hue of red onion skin on the rim.

Nose
———
A whiff of magnolia blossom followed stridently by perfumed wild-strawberry compote with a hints of buttered white sourdough toast.

Palate
————

Rich mouth-filling flavours of strawberry balanced by zingy tart cranberry and pithy Amalfi lemon notes. The texture is creamy with a clean, crisp, yeasty finish.

Ageing: Ready to drink now.

PREMIERE CUVÉE

English Sparkling Wine

Blend: The blend of Chardonnay (58%), Pinot Meunier (18%) & Pinot Noir (24%) was carefully developed under the guidance of our leading Champenois chef de caves, Hervé Jestin.

Tasting note: Nose rich and warm exuding Seville orange and brioche aromas, with hints of dried flowers and toasted hazelnuts. The palate is explosive, with mouthwatering acidity and dried apricot and citrus. The mouthfeel is a silky soft foam of tingling sparks. The finish shows undertones of vanilla and and salted caramel, ending again with that fresh, vivid, orangey tang. Very dry, long and immensely complex.

Ageing: Ready to drink now but will benefit from ageing.
